Amazing Chocolate Chip Cookie Recipe

This is our families secret chocolate chip recipe. We have a large family so this one makes over 4 dozen chocolate chip cookies. You can experiment with most cookie recipes to adjust to your own taste. Remenmber the more brown sugar you use the more chewy type cookie you create. I don't think this one needs much adjusting. First we will start with ingredients.

 INGREDIENTS: 

 4 cups (1 ounce) squares unsweetened chocolate

1cup butter

2 cups all-purpose flour

2 cups yellow cake mix

1 teaspoon baking soda

2 teaspoon baking powder

1/2 teaspoon salt

 1 1/2 cups white sugar

1 cup brown sugar

4 eggs

 2 teaspoon vanilla extract

 1 1/4cup sour cream

3 1/2 cups semisweet chocolate chips


 Directions to cookie recipe. 

 1. Preheat oven to 375 degrees.

 2. Melt butter and unsweetened chocolate together.

3. Sift cake mix, flour, baking soda, baking powder, and salt together.

4. In a large bowl, beat sugar, eggs, and vanilla.

5. Stir the chocolate mixture into the eggs.

6. Stir in the sifted ingredients with sour cream.

 7. Mix in chocolate chips.

 8. Drop rounded tablespoonfuls cookie sheets.

9. Bake for until edges are starting to turn dark brown.

 Enjoy these wonderful cookies at any occasion. They disappear very quickly at family events. You might notice my secret ingredient. It is the boxed yellow cake mix. Cake flour gives the cookie a little more body than the regular unbleached flour.You may use any of your favorite brands. If you are making smaller cookies don't forget that the baking time goes down.

Many ovens produce heat from the bottom of the oven, so as not burn the bottom of the cookies many times I will double pan the cookies before I bake them. Baking is similar to a gigantic chemistry experiment. The best way to get the experiment right is to keep experimenting. Once you have found the best combinations of ingredients and procedures, stick with it. Enjoy!

Chocolate Dessert - Something For Everyone


Who doesn't like a rich, delicious chocolate dessert to end a great meal? In fact, a great chocolate dessert recipe can make an otherwise bland meal seem great. They say people remember the end of the meal more than the beginning. So, it's no surprise that most chefs recommend you put a little thought into choosing a great finishing recipe and luckily, a chocolate dessert will more often than not, fill the bill superbly and easily! 

How to Find a Great Chocolate Dessert Recipe

 I know I am a chocolate freak and I think there is truly nothing better than enjoying a home-made dessert. But the best part is there are so many recipes to choose from that it's just so easy to be a chocolate dessert freak! So, I'm going to share one of my real favorite recipes. It is called the double chocolate chunk cookie recipe, and for this you will need: 2 cups all-purpose flour; cup Nestle Toll House baking cocoa; 1 tsp baking soda; tsp salt; 1 cup butter or margarine, softened; 2/3 cup granulated sugar; 2/3 cup packed brown sugar; 1 tsp vanilla extract; 2 large eggs; and 1 cups Nestle Toll House semi-sweet chocolate chunks.

 First you need to preheat the oven to 350F, it is important that the oven has reached baking temperature, and then combine the flour, cocoa, baking soda and salt in a medium bowl, and beat the butter, granulated sugar, brown sugar and vanilla extract in a large mixer bowl until it is perfectly creamy. Then add the eggs one at a time, beating well after each addition; gradually beat in the flour mixture, stir in chunks, then drop by rounded teaspoon onto ungreased baking sheets.

 Now let them bake away for about 9-11 minutes. You will see the cookies puffing up and the centers will still be soft. Check by inserting a skewer or strand of raw spaghetti. Then allow them to cool on baking sheets for a couple of minutes after you take them out of the oven, and remove to wire racks so that they can cool completely.

 I know you will just love this simple recipe. It is so easy but really satisfying even as a dessert. To dress the cookies up a bit and to make them more of a formal chocolate dessert, you may like to try the following finishing touches.

 Option One

Arrange two cookies in a small desert bowl. Pile whipped cream between the cookies then crumble two small meringues over the top. Dress up with fresh raspberries and top with a small amount of extra whipped cream.

 Option Two

Place a layer of fresh strawberries on bottom of serving bowl. Carefully slice one cookie lengthways and place one half on top of strawberries. Add layer of whipped or thickened cream that has been flavored with orange liqueur. Place other half of cookie on top. Add more fresh cream and garnish with a few strawberries. Bon appetit!

How To Bake Perfect Chocolate Cakes


One of the common favorite desserts is probably the humble chocolate cake. It is probably the ultimate indulgence for any chocolate lover and anyone could swoon over a piece of rich and moist chocolate cake. It is no wonder that chocolate cakes recipes can be found everywhere.

 It may seem daunting to try baking the perfectly moist and rich chocolate cakes especially if you are not so well versed in baking cakes. However, there is nothing so intimidating about it as baking a really good chocolate cake require some skills that you only need to practice to perfect. After practicing a few times, you will soon become so good in baking great chocolate cakes, you will wonder why you didn't start in the first place. In most chocolate cake recipes, the main ingredients are baking chocolate.

Now, the one big secret for a wonderful chocolatey taste to your cake is the quality of the chocolate you use to make it. There are a lot of different chocolates out there to choose from so you could easily become confused by it all. To choose the suitable chocolate for your cake baking experiments, always go for the kinds with higher cocoa content, such as the ones with 70% cocoa or more.

With a higher cocoa content, the chocolate will be richer, thicker and packs a stronger cocoa flavour. If you noticed how I kept mentioning baking chocolate instead of just chocolate, this is because baking chocolates are always a better choice compared to normal chocolates.

The sugar content of baking chocolates are lower and this would not tamper with the sweetness of your cake. Also, if you don't want to bake a dark chocolate cake, you can always try baking chocolates with lower than 70% cocoa content. If you want a healthier option and hassle-free way of baking chocolate cakes, you could always use cocoa powder as an alternative to baking chocolates.

There are quite a few chocolate cake recipes that do not call for baking chocolates so there is no hassle of melting the chocolate. You only need to sift in the cocoa powder into the ingredients. The best cocoa powder are of course the organic and 100% cocoa powder.

 Most chocolate cake recipes only require five main ingredients, that is the chocolate, butter, eggs, flour and sugar. After choosing your chocolates, you will need to take the first step of melting the chocolate and the butter together. To melt this two sensitive ingredients need patience as you will need to boil a pan of water first.

Then you place the chocolate and butter in a heatproof bowl and then you place the bowl over the boiling water to melt. Stir to combine. An easier way, thanks to technology, is of course to use the microwave. Just add both ingredients in a bowl and microwave it for a couple of minutes.

 It is important to remember that no matter what type of cake you are making, you will get great results if you only use fresh and quality ingredients. So, use only the best and you will have the best chocolate cake ever.

Recipe For the Best Chocolate Cupcakes

This chocolate cupcake recipe is so easy to make and so delicious it will satisfy all your chocolate cravings. It has a wonderfully decadent chocolate flavour and can be topped with a fluffy chocolate frosting or a chocolate ganache.

But the secret to a great chocolate cupcake is to use the best quality chocolate you can afford. Nothing else gives you that true chocolate flavour.

The ingredients you will need are as follows:


60g (2 oz) dark eating chocolate, chopped coarsely
2/3 cup water
90g (3 oz) softened butter
1 cup firmly packed brown sugar
2 eggs
2/3 cup self raising flour
2 tablespoons cocoa powder
1/3 cup almond meal

Preheat your oven to 170oC (325oF) and line a 12 hole muffin pan with paper cases.

The first step is to melt the chocolate. Place chocolate and water in a double boiler over simmering water and stir until chocolate is smooth. Remove from heat and allow to cool slightly for 5-10 minutes.

Combine the sifted self raising flour, cocoa powder and almond meal in a small bowl.

In a small mixer bowl beat the butter, sugar and eggs with an electric mixer until the mixture is light and fluffy. Transfer to a large bowl.

Gradually stir in the sifted flour and cocoa alternately with the still warm chocolate mixture. Add chocolate mixture slowly so as not to scramble the eggs and mix until just combined.

Spoon into paper patty cases but only three quarters fill the cases. Bake in oven for about 25 minutes. Cakes are ready when they spring back slightly to the touch or when a skewer inserted in the centre comes out clean. Leave cakes in pan for about 5 minutes before transferring to a wire rack to cool.

You are now ready to ice and decorate your cakes. You can make these cupcakes extra special by decorating them with chocolate leaves and chocolate flowers. They are sure to be a hit with everyone, both young and old.
